Ginger-Lemon Carbonated Infusion

Ingredients
- 2 inches, peeled and thinly sliced Fresh ginger
- 1, thinly sliced Lemon
- 1 cup Water
- 1/4 cup Sugar
- 2 tbsp Lemon juice
- 4 cups Sparkling water
- 1 cup Ice
Instructions
- Step 1: In a small saucepan, combine 2 inches peeled and thinly sliced fresh ginger, 1 thinly sliced lemon, 1 cup water, and 1/4 cup sugar. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves, for 5 minutes.
- Step 2: Remove from heat and let steep for 30 minutes. Strain the ginger-lemon syrup into a bowl, discarding the solids.
- Step 3: Stir 2 tbsp lemon juice into the strained syrup, then add 4 cups sparkling water. Pour over 1 cup ice in a glass and serve immediately.
