Goan Vindaloo Pork with Vinegar and Cloves
A traditional Goan pork dish simmered with vinegar, spices, and whole cloves for a tangy, aromatic flavor.

Ingredients
- 1.5 lbs (700g), cut into 1-inch cubes Pork shoulder
- 1/2 cup (120ml) Vinegar
- 1 tsp Cloves
- 1 large, finely chopped (1 cup) Onion
- 5 cloves, minced Garlic
- 1 inch piece, minced Ginger
- 1 tsp Turmeric powder
- 2 tsp Red chili powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1 tsp Salt
- 1 cup Water
Instructions
- Step 1: Heat 2 tbsp oil in a large pot over medium-high heat. Add 1 cup chopped onion and cook for 4 minutes until translucent.
- Step 2: Add 5 minced garlic cloves and 1 inch minced ginger; cook for 2 minutes until fragrant.
- Step 3: Stir in 1 tsp turmeric powder, 2 tsp red chili powder, 1 tsp cumin powder, and 1 tsp coriander powder; cook for 1 minute until aromatic.
- Step 4: Add 700g pork cubes and cook for 5 minutes, turning to brown on all sides.
- Step 5: Pour in 1/2 cup vinegar and 1 tsp cloves; stir to combine.
- Step 6: Add 1 tsp salt and 1 cup water; bring to a simmer.
- Step 7: Cover and reduce heat to low; simmer for 1.5 hours until pork is tender.
- Step 8: Uncover and simmer for 15 minutes to thicken sauce.
