Goan Vindaloo Pork with Vinegar and Cloves

  1. Step 1: Heat 2 tbsp oil in a large pot over medium-high heat. Add 1 cup chopped onion and cook for 4 minutes until translucent.
  2. Step 2: Add 5 minced garlic cloves and 1 inch minced ginger; cook for 2 minutes until fragrant.
  3. Step 3: Stir in 1 tsp turmeric powder, 2 tsp red chili powder, 1 tsp cumin powder, and 1 tsp coriander powder; cook for 1 minute until aromatic.
  4. Step 4: Add 700g pork cubes and cook for 5 minutes, turning to brown on all sides.
  5. Step 5: Pour in 1/2 cup vinegar and 1 tsp cloves; stir to combine.
  6. Step 6: Add 1 tsp salt and 1 cup water; bring to a simmer.
  7. Step 7: Cover and reduce heat to low; simmer for 1.5 hours until pork is tender.
  8. Step 8: Uncover and simmer for 15 minutes to thicken sauce.
