Golden-Style Herb-Roasted Chicken

Ingredients
- 1.5 lbs, skin-on chicken thighs
- 3 tbsp olive oil
- 4, minced garlic cloves
- 2 tbsp, finely chopped fresh rosemary
- 1 tbsp fresh thyme leaves
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat 1.5 lbs chicken thighs dry with paper towels. In a bowl, mix 3 tbsp olive oil, 4 minced garlic cloves, 2 tbsp chopped fresh rosemary, 1 tbsp fresh thyme leaves, 1 tbsp lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper.
- Step 2: Coat chicken thighs evenly with the herb mixture, then place skin-side up in a roasting pan. Roast at 425°F for 35 minutes until golden and juices run clear when pierced.
- Step 3: Let rest for 5 minutes before serving. The skin should be crisp and the meat tender with herb-infused flavor.
