Grilled Seasonal Vegetables with Orange and Radicchio
A vibrant side dish of seasonal vegetables roasted with citrus and a touch of bitterness from radicchio, perfect for an aperitivo spread.

Ingredients
- 1 cup Cherry tomatoes
- 1 medium, sliced into 1/4-inch rounds Zucchini
- 1, sliced into strips Red bell pepper
- 1/2 head, thinly sliced Radicchio
- 3 tbsp Olive oil
- 2 tbsp Fresh orange juice
- 1 tsp Lemon zest
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Preheat grill or grill pan to medium-high heat.
- Step 2: Toss cherry tomatoes, zucchini, and red bell pepper with 3 tbsp olive oil, 2 tbsp fresh orange juice, 1 tsp lemon zest, 1/2 tsp salt, and 1/4 tsp black pepper.
- Step 3: Grill vegetables for 5-7 minutes per side until tender and slightly charred, then transfer to a plate and arrange radicchio slices around them.
