Haitian Bean Cakes with Coconut and Thyme

Ingredients
- 1.5 cups black beans
- 1/2 cup all-purpose flour
- 1/4 cup grated coconut
- 1/4 cup coconut milk
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- to taste salt
- 2 tbsp vegetable oil
Instructions
- Step 1: Mash 1.5 cups cooked black beans until mostly smooth. Add 1/2 cup all-purpose flour, 1/4 cup grated coconut, 1/4 cup coconut milk, 1 tsp dried thyme, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne pepper, and salt to taste. Mix until a cohesive dough forms.
- Step 2: Divide dough into 8 portions and shape into oval cakes about 1 inch thick.
- Step 3: Heat 2 tbsp vegetable oil in a skillet over medium heat. Fry cakes for 4-5 minutes per side until golden brown and crispy.
- Step 4: Serve hot with fresh mango or a simple green salad.
