Harissa-Glazed Lamb Chops with Minted Cucumber Salad

Ingredients
- 4 (1-inch thick) lamb chops
- 2 tbsp harissa paste
- 1 tbsp olive oil
- 1 (diced) cucumber
- 1/4 cup (finely diced) red onion
- 2 tbsp (chopped) fresh mint
- 1 tsp lemon juice
- 1/4 tsp salt
Instructions
- Step 1: Rub lamb chops with 1 tbsp olive oil and 2 tbsp harissa paste, then season with 1/4 tsp salt.
- Step 2: Heat a grill or skillet over medium-high heat. Cook chops for 4-5 minutes per side until medium-rare (internal temperature 135°F).
- Step 3: While chops cook, combine diced cucumber, red onion, 2 tbsp chopped mint, 1 tsp lemon juice, and a pinch of salt in a bowl.
- Step 4: Rest chops for 5 minutes, then serve with cucumber salad on the side.
