Harissa-Roasted Chickpeas with Citrus

  1. Step 1: Preheat oven to 400°F. Drain and rinse 15 oz can chickpeas thoroughly, then pat completely dry with a clean towel.
  2. Step 2: In a bowl, toss dried chickpeas with 1 tbsp olive oil, 2 tbsp harissa paste, 1/2 tsp cumin, and 1/2 tsp sea salt until evenly coated.
  3. Step 3: Spread chickpeas in a single layer on a baking sheet and roast for 25-30 minutes, shaking the pan every 10 minutes, until golden brown and crisp.
  4. Step 4: While roasting, zest 1 orange and set aside. Once chickpeas are done, toss them while hot with 1 tsp orange zest and serve immediately.
