Hearty Ground Beef and Vegetable Chili with Sweet Potato

- 16 oz ground beef
- 1 medium sweet potato
- 1 bell pepper
- 1/2 cup onion
- 2 cloves garlic
- 14 oz diced tomatoes
- 2 tbsp tomato paste
- 1 tsp chili powder
- 1 tsp cumin
- 1 cup chicken broth
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp avocado oil in a large pot over medium-high heat. Add 16 oz ground beef and cook for 5-7 minutes, breaking into small pieces, until browned. Remove excess fat with a spoon.
- Step 2: Add 1/2 cup diced onion, 1/2 cup diced bell pepper, and 2 minced garlic cloves to the pot. Cook for 3 minutes until onions are translucent.
- Step 3: Stir in 14 oz diced tomatoes (with juice), 2 tbsp tomato paste, 1 tsp chili powder, 1 tsp cumin, 1/2 tsp salt, 1/4 tsp black pepper, and 1 cup chicken broth. Bring to a simmer, then add 1 peeled and diced medium sweet potato. Cover and simmer for 20-25 minutes until sweet potatoes are tender.
