Herb-Crusted Ground Beef Loaf with Roasted Root Vegetables

Ingredients
- 16 oz ground beef
- 2 medium, peeled and diced carrots
- 2 medium, peeled and diced parsnips
- 1 tsp fresh, chopped rosemary
- 1 tsp fresh, chopped thyme
- 2 cloves, minced garlic
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 375°F (190°C). Toss 2 diced carrots and 2 diced parsnips with 1 tbsp olive oil, 1/4 tsp sea salt, and 1/4 tsp black pepper on a baking sheet. Roast for 25 minutes until tender and golden at the edges.
- Step 2: In a bowl, combine 16 oz ground beef, 2 minced garlic cloves, 1 tsp chopped rosemary, 1 tsp chopped thyme, 1/2 tsp sea salt, and 1/4 tsp black pepper. Mix gently with hands until evenly distributed.
- Step 3: Press the mixture into a loaf pan or shape into a loaf on a parchment-lined baking sheet. Bake for 20-22 minutes until the internal temperature reaches 160°F (71°C).
- Step 4: Let rest 5 minutes before slicing. Serve with roasted carrots and parsnips on the side.
