Herb-Grown Chicken with Lemon and Thyme

Ingredients
- 1.5 lbs, boneless and skinless chicken breasts
- 1, zested and juiced lemon
- 1 tbsp, chopped fresh thyme
- 2 tbsp olive oil
- 2 cloves, minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat 1.5 lbs chicken breasts dry with paper towels.
- Step 2: In a small bowl, mix 2 tbsp olive oil, 2 minced garlic cloves, 1/2 tsp salt, 1/4 tsp black pepper, 1 tbsp chopped thyme, and 1 lemon's zest and juice.
- Step 3: Rub the herb mixture evenly over chicken breasts, coating all sides.
- Step 4: Place chicken in a single layer in a baking dish and bake for 20-22 minutes until internal temperature reaches 165°F and edges are golden.
- Step 5: Rest chicken for 5 minutes before slicing to retain juices.
