Herb-Grown Chicken with Lemon and Thyme

  1. Step 1: Preheat oven to 400°F. Pat 1.5 lbs chicken breasts dry with paper towels.
  2. Step 2: In a small bowl, mix 2 tbsp olive oil, 2 minced garlic cloves, 1/2 tsp salt, 1/4 tsp black pepper, 1 tbsp chopped thyme, and 1 lemon's zest and juice.
  3. Step 3: Rub the herb mixture evenly over chicken breasts, coating all sides.
  4. Step 4: Place chicken in a single layer in a baking dish and bake for 20-22 minutes until internal temperature reaches 165°F and edges are golden.
  5. Step 5: Rest chicken for 5 minutes before slicing to retain juices.
