Herb-Infused Baked Cod with Lemon and Asparagus

Ingredients
- 4 (6 oz each) cod fillets
- 2 tbsp olive oil
- 1, sliced into thin rounds lemon
- 1/4 cup, chopped dill
- 1/4 cup, chopped parsley
- 2 cloves, minced garlic
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 lb, trimmed and cut into 2-inch pieces asparagus
Instructions
- Step 1: Preheat oven to 400°F (200°C). Place cod fillets on a large sheet pan, drizzle with 1 tbsp olive oil, and season with 1/4 tsp salt and 1/8 tsp black pepper on both sides.
- Step 2: Arrange 2 lemon slices on top of each fillet, then scatter 2 minced garlic cloves, 1/4 cup chopped dill, and 1/4 cup chopped parsley over the top.
- Step 3: Place 1 lb trimmed asparagus pieces around the cod on the sheet pan.
- Step 4: Bake for 12-15 minutes until cod is opaque and flakes easily with a fork, and asparagus is tender-crisp.
- Step 5: Remove from oven and let rest for 2 minutes before serving.
