Herb-Infused Beef and Root Vegetable Galettes

Ingredients
- 1 lb ground beef
- 1 cup, diced carrots
- 1 cup, diced parsnips
- 2 medium, peeled and mashed potatoes
- 2 tbsp, chopped fresh thyme
- 1 tbsp, chopped fresh rosemary
- 3 tbsp all-purpose flour
- 2 tbsp unsalted butter
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp butter in a large skillet over medium heat. Add carrots and parsnips, cooking for 5 minutes until slightly softened, then add ground beef and cook until browned, breaking into crumbles with a spoon.
- Step 2: Stir in 1/2 cup water, salt, and pepper, then simmer for 10 minutes until vegetables are tender. Remove from heat and stir in thyme and rosemary.
- Step 3: Mix mashed potatoes with flour and remaining butter until smooth, then season with salt and pepper.
- Step 4: Preheat oven to 375°F. Divide potato mixture into 8 portions and flatten into circles on a parchment-lined baking sheet. Top each with 2 tbsp beef filling, then fold edges over to form a half-moon shape.
- Step 5: Bake for 20-25 minutes until golden and crisp, then let rest for 5 minutes before serving.
