  2. Step 2: Heat 1 tbsp olive oil in a cast-iron skillet over medium-high heat until shimmering; sear beef for 2 minutes per side until golden brown.
  3. Step 3: Transfer skillet to oven and roast for 12-15 minutes until internal temperature reaches 125°F (52°C) for medium-rare.
  4. Step 4: While beef rests for 10 minutes, melt 3 tbsp butter in skillet, add 2 minced garlic cloves, and cook 1 minute until fragrant; stir in 1 tbsp fresh thyme and 1 tbsp fresh parsley.
  5. Step 5: Slice beef and drizzle with garlic butter sauce.
