Herb-Infused Chicken Thighs with Roasted Garlic

Ingredients
- 6 (bone-in, skin-on) chicken thighs
- 1 head, halved horizontally garlic
- 2 tbsp, chopped fresh thyme
- 1 tbsp, chopped fresh rosemary
- 3 tbsp olive oil
- 1/2 cup chicken broth
- 1, sliced into rounds lemon
- 3/4 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 375°F. Pat chicken thighs dry and season with 3/4 tsp salt and 1/2 tsp black pepper.
- Step 2: Heat 3 tbsp olive oil in an ovenproof skillet over medium-high heat. Add chicken skin-side down and sear for 5 minutes until golden brown.
- Step 3: Flip chicken and add 1 halved garlic head (cut side up), 2 tbsp chopped thyme, 1 tbsp chopped rosemary, and 1/2 cup chicken broth to the skillet.
- Step 4: Place 3 lemon slices on top of chicken, then cover skillet with a lid.
- Step 5: Bake for 25-30 minutes until chicken reaches 165°F internal temperature and garlic is soft.
- Step 6: Remove chicken, discard lemon slices, and spoon pan juices over chicken before serving.
