Herb-Infused Chicken Thighs with Roasted Garlic

  1. Step 1: Preheat oven to 375°F. Pat chicken thighs dry and season with 3/4 tsp salt and 1/2 tsp black pepper.
  2. Step 2: Heat 3 tbsp olive oil in an ovenproof skillet over medium-high heat. Add chicken skin-side down and sear for 5 minutes until golden brown.
  3. Step 3: Flip chicken and add 1 halved garlic head (cut side up), 2 tbsp chopped thyme, 1 tbsp chopped rosemary, and 1/2 cup chicken broth to the skillet.
  4. Step 4: Place 3 lemon slices on top of chicken, then cover skillet with a lid.
  5. Step 5: Bake for 25-30 minutes until chicken reaches 165°F internal temperature and garlic is soft.
  6. Step 6: Remove chicken, discard lemon slices, and spoon pan juices over chicken before serving.
