- 2, boneless and skinless chicken breasts
- 4 cloves, minced garlic
- 1, zested and juiced lemon
- 1 tablespoon, chopped fresh thyme
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat 2 boneless, skinless chicken breasts dry with paper towels, then season both sides with 1/2 teaspoon sea salt and 1/4 teaspoon black pepper.
- Step 2: Heat 2 tablespoons olive oil in an oven-safe skillet over medium-high heat until shimmering. Add chicken breasts and sear for 3 minutes per side until golden brown, then transfer skillet to oven.
- Step 3: Scatter 4 minced garlic cloves and 1 tablespoon chopped fresh thyme over chicken, then squeeze the juice of 1 lemon over the top. Bake for 18-20 minutes until internal temperature reaches 165°F (74°C).
- Step 4: Remove skillet from oven, add 2 tablespoons unsalted butter, and swirl to melt. Squeeze in the remaining lemon zest and cook for 1 minute until butter emulsifies into a glossy sauce, stirring constantly.
