Herb-Infused Olive Oil Pasta with Lemon

Ingredients
- 8 oz spaghetti
- 1/4 cup fresh parsley
- 2 tbsp fresh basil
- 2 cloves garlic
- 3 tbsp olive oil
- 1 lemon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup Parmesan cheese
Instructions
- Step 1: Bring a large pot of salted water (1/2 tsp salt) to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain, reserving 1/2 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a small saucepan over medium-low heat. Add 2 minced garlic cloves and cook for 2-3 minutes until fragrant but not browned.
- Step 3: Stir in 1/4 cup chopped parsley, 2 tbsp chopped basil, the zest of 1 lemon, and the juice of 1 lemon. Cook for 1 minute, then remove from heat.
- Step 4: Add drained spaghetti to the saucepan, tossing to coat. Add 2-3 tbsp reserved pasta water to create a glossy sauce, then season with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 5: Serve immediately with grated Parmesan cheese.
