Herb-Infused Quinoa Salad with Garden Greens

Ingredients
- 1 cup quinoa
- 1 cup cherry tomatoes
- 1/4 cup fresh basil
- 2 tbsp fresh dill
- 3 tbsp olive oil
- 1 tbsp lemon juice
Instructions
- Step 1: Rinse 1 cup quinoa under cold water until water runs clear. Cook in 2 cups water for 15 minutes until water is absorbed and quinoa is fluffy. Let cool for 10 minutes.
- Step 2: Chop 1 cup cherry tomatoes into halves and finely chop 1/4 cup fresh basil and 2 tbsp fresh dill.
- Step 3: In a large bowl, combine cooled quinoa, cherry tomatoes, basil, and dill. Whisk 3 tbsp olive oil with 1 tbsp lemon juice, then pour over salad and toss gently until evenly coated.
