Herb-Infused Roast Chicken with Lemon

Ingredients
- 1 (4- to 5-pound) whole chicken chicken
- 3 tbsp olive oil
- 1 tbsp fresh thyme
- 1 tbsp fresh rosemary
- 1 lemon
- 4 cloves garlic
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Pat chicken dry with paper towels. Rub 3 tbsp olive oil over the entire surface, then season with 1 tsp salt, 1/2 tsp black pepper, 1 tbsp fresh thyme, and 1 tbsp fresh rosemary.
- Step 2: Cut lemon into quarters and stuff into the cavity with 4 minced garlic cloves. Tuck lemon slices under chicken skin for even flavoring.
- Step 3: Place chicken breast-side up on a roasting pan. Roast for 1 hour 15 minutes, basting with pan juices every 20 minutes, until internal temperature reaches 165°F in the thickest part of the thigh.
