Herb-Infused Roasted Carrots with Lemon Zest

Ingredients
- 1.5 lbs (3 cups, peeled and sliced into 1/2-inch coins) Carrots
- 2 tbsp Olive oil
- 1 tsp (leaves only) Fresh thyme
- 1 tsp Lemon zest
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss 1.5 lbs peeled and 1/2-inch sliced carrots with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper on a baking sheet.
- Step 2: Roast for 25 minutes, stirring once halfway, until carrots are tender and edges are golden brown.
- Step 3: Remove from oven, sprinkle with 1 tsp fresh thyme leaves and 1 tsp lemon zest, and toss gently to coat.
