Herb-Roasted Beef Tenderloin

Ingredients
- 1 (about 1.5 lbs) Beef tenderloin
- 1 tbsp Olive oil
- 2 cloves, minced Garlic
- 1 tbsp, chopped Fresh rosemary
- 1 tbsp, chopped Fresh thyme
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Step 2: Pat 1.5 lb beef tenderloin dry with paper towels, then rub 1 tbsp olive oil over the entire surface.
- Step 3: Mix 2 minced garlic cloves, 1 tbsp chopped rosemary, 1 tbsp chopped thyme, 1/2 tsp salt, and 1/4 tsp black pepper in a small bowl to form a paste.
- Step 4: Rub the herb paste evenly over the beef tenderloin, covering all sides.
- Step 5: Place the beef on the prepared baking sheet and roast for 20-25 minutes for medium-rare (internal temperature of 130-135°F).
- Step 6: Remove from oven, tent with foil, and let rest for 10 minutes before slicing.
