- 1 lb, skin-on chicken thighs
- 2 medium, peeled and cubed sweet potatoes
- 2 tbsp coconut aminos
- 1 tbsp olive oil
- 1 tbsp, chopped fresh rosemary
- 1/2 tsp garlic powder
- 1/4 tsp sea salt
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, 1/2 tsp garlic powder, and 1/4 tsp sea salt on a parchment-lined baking sheet.
- Step 2: Arrange chicken thighs skin-side up on the same sheet, season with 1/2 tsp sea salt and 1 tbsp chopped rosemary.
- Step 3: Roast for 25-30 minutes until chicken is golden and sweet potatoes are tender when pierced. Remove from oven, drizzle with 2 tbsp coconut aminos, and toss to coat before serving.
