Herb-Roasted Chicken with Sweet Potato and Broccoli

Ingredients
- 4 (bone-in, skin-on) chicken thighs
- 2 medium, peeled and cubed sweet potatoes
- 16 oz, cut into florets broccoli
- 3 tbsp olive oil
- 3 cloves, minced garlic
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Place 4 bone-in, skin-on chicken thighs in a single layer on a baking sheet.
- Step 2: In a small bowl, mix 2 tbsp olive oil, 3 minced garlic cloves, 1 tsp dried thyme, 1/2 tsp dried rosemary, 1/2 tsp salt, and 1/4 tsp black pepper. Rub the mixture over the chicken thighs.
- Step 3: Toss 2 medium peeled and cubed sweet potatoes and 16 oz broccoli florets with the remaining 1 tbsp olive oil and a pinch of salt. Spread around the chicken on the baking sheet.
- Step 4: Roast for 35-40 minutes until the chicken is golden brown and the sweet potatoes are tender when pierced with a fork.
