Herb-Stuffed Chicken Breasts with Lemon-Garlic Sauce

Ingredients
- 4, 6 ounces each Chicken breasts
- 2 tablespoons, chopped Fresh thyme
- 2 tablespoons, chopped Fresh parsley
- 3 cloves, minced Garlic
- 1 teaspoon Lemon zest
- 3 tablespoons Olive oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 tablespoons Lemon juice
- 1 tablespoon, chopped Fresh dill
Instructions
- Step 1: Preheat oven to 400°F (200°C). Cut a horizontal pocket into each chicken breast without piercing through to the other side. Season the inside of each pocket with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Step 2: In a small bowl, combine 2 tablespoons fresh thyme, 2 tablespoons fresh parsley, 3 minced garlic cloves, 1 teaspoon lemon zest, 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Spoon half of this mixture into each chicken pocket.
- Step 3: Place stuffed chicken in a baking dish, drizzle with 1 tablespoon olive oil, and season the exterior with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
- Step 4: While chicken bakes, whisk together 2 tablespoons lemon juice, 1 minced garlic clove, 1 tablespoon fresh dill, and 1 tablespoon olive oil to make the sauce. Drizzle over chicken before serving.
