Hidden File Risotto with Lemon Zest

Ingredients
- 1 1/2 cups arborio rice
- 1/2 cup finely diced onion
- 1/2 cup white wine
- 4 cups chicken broth
- 2 tbsp butter
- 1/2 cup grated Parmesan cheese
- 1 lemon
- 1/2 tsp salt
- pinch black pepper
Instructions
- Step 1: In a medium saucepan, heat 2 tbsp butter over medium heat. Add 1/2 cup diced onion and cook for 5 minutes until soft and translucent, stirring occasionally.
- Step 2: Add 1 1/2 cups arborio rice to the saucepan and stir for 2 minutes until rice is coated and slightly toasted. Pour in 1/2 cup white wine and simmer until evaporated, about 2 minutes.
- Step 3: Add 4 cups chicken broth, 1/2 tsp salt, and a pinch of black pepper. Stir constantly and cook over medium-low heat for 18-20 minutes, adding broth 1/2 cup at a time and stirring frequently until rice is tender and creamy.
- Step 4: Stir in 1/2 cup grated Parmesan cheese and the zest of 1 lemon. Cook for 1 more minute until cheese melts and lemon zest infuses the risotto. Remove from heat immediately to prevent overcooking.
