Honey-Ginger Chicken with Snap Peas

- 1 lb, boneless and skinless chicken thighs
- 3 tbsp honey
- 1 tbsp, grated fresh ginger
- 2 tbsp soy sauce
- 2 cups, trimmed snap peas
- 1 tbsp sesame oil
- 1 clove, minced garlic
- 1 tsp cornstarch
Instructions
- Step 1: Pat 1 lb chicken thighs dry with paper towels and season with 1/4 tsp salt. Heat 1 tbsp sesame oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add chicken thighs and cook for 5 minutes per side until golden brown and cooked through. Remove chicken and set aside.
- Step 3: In the same skillet, add 1 minced garlic clove and 1 tbsp grated fresh ginger, sautéing for 30 seconds until aromatic.
- Step 4: Stir in 3 tbsp honey, 2 tbsp soy sauce, and 1 tsp cornstarch, then add 2 cups trimmed snap peas. Cook for 3-4 minutes until peas are bright green and crisp-tender, stirring constantly.
- Step 5: Return chicken to the skillet, coating evenly in sauce. Cook for 1 minute more until sauce thickens slightly and coats the chicken.
