Honey-Glazed Pork Chops with Roasted Sweet Potatoes

Ingredients
- 4 (1-inch thick) pork chops
- 3 tbsp honey
- 1 tbsp soy sauce
- 1 tsp grated ginger
- 2 lbs, peeled and cubed sweet potatoes
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss sweet potato cubes with 1 tbsp olive oil, rosemary, salt, and pepper; spread on a sheet pan.
- Step 2: In a bowl, whisk honey, soy sauce, and grated ginger. Pat pork chops dry, then brush with 2 tbsp honey mixture.
- Step 3: Roast sweet potatoes for 20 minutes, then add pork chops to the pan. Roast 15-18 minutes more until pork reaches 145°F and glaze is bubbly.
