Honey-Glazed Pork Tenderloin with Apple and Thyme

Ingredients
- 1.5 lbs pork tenderloin
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
- 3 tbsp honey
- 2 tbsp apple cider vinegar
- 1 large, peeled and sliced apple
- 1 tbsp butter
Instructions
- Step 1: Pat 1.5 lbs pork tenderloin dry and season with 1 tsp dried thyme, 1/4 tsp salt, and 1/4 tsp black pepper. Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering, then add the pork and sear for 2 minutes per side until golden brown.
- Step 2: Transfer the skillet to a preheated oven at 400°F and roast for 15-18 minutes, or until the internal temperature reaches 145°F.
- Step 3: While the pork roasts, melt 1 tbsp butter in a small skillet over medium heat. Add 1 peeled and sliced large apple and cook for 5-7 minutes until tender and golden, stirring occasionally.
- Step 4: Whisk together 3 tbsp honey and 2 tbsp apple cider vinegar in a small bowl. After removing the pork from the oven, transfer it to a cutting board and let rest for 5 minutes. Pour the honey mixture over the pork and let sit for 2 minutes to glaze.
