Honey-Rosewater Glazed Chicken with Lemon and Thyme

- 1.5 lbs chicken thighs
- 3 tbsp honey
- 1 tbsp rosewater
- 1.5 tbsp lemon juice
- 2 tsp fresh thyme
- 2 cloves garlic
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat 1.5 lbs bone-in, skin-on chicken thighs dry with paper towels and season evenly with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: In a small bowl, whisk together 3 tbsp honey, 1 tbsp rosewater, 1.5 tbsp lemon juice, 2 tsp minced fresh thyme, and 2 minced garlic cloves until smooth.
- Step 3: Heat 1 tbsp olive oil in a large ovenproof skillet over medium-high heat until shimmering, then add chicken thighs skin-side down and cook for 5 minutes until golden brown, flipping once to cook the other side for 2 minutes.
- Step 4: Pour the honey-rosewater mixture evenly over the chicken, ensuring it coats the thighs, and simmer for 2 minutes over medium heat to meld flavors.
- Step 5: Transfer the skillet to a preheated oven at 400°F and roast for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the glaze is bubbling and slightly caramelized.
