Huckleberry and Blackberry Cobbler

  1. Step 1: Preheat oven to 375°F. In a medium bowl, combine 1 1/2 cups huckleberries, 1 1/2 cups blackberries, 1/2 cup sugar, 1/4 cup all-purpose flour, 1 tbsp cornstarch, and 1 tbsp lemon juice. Mix well and pour into a 9-inch baking dish.
  2. Step 2: Cut 2 tbsp cold butter into small cubes and dot over the berry mixture.
  3. Step 3: Roll out 1 cup biscuit dough to 1/2-inch thickness and cut into 8 rounds. Place the rounds on top of the berries, overlapping slightly.
  4. Step 4: Brush the biscuit tops with 1/4 cup heavy cream. Bake for 35-40 minutes until the top is golden and the filling is bubbling.
  5. Step 5: Let cool for 15 minutes before serving.
