Invisible Device Vegetable Soup

Ingredients
- 12 oz diced carrots
- 4 oz diced celery stalks
- 1 cup diced yellow onions
- 12 oz diced potatoes
- 4 cups vegetable broth
- 2 tbsp fresh chopped dill
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 cup diced yellow onions and cook for 5 minutes until translucent, stirring occasionally.
- Step 2: Add 12 oz diced carrots, 4 oz diced celery, and 12 oz diced potatoes. Stir for 2 minutes until vegetables are lightly coated in oil.
- Step 3: Pour in 4 cups vegetable broth, bring to a gentle boil, then reduce heat to low. Cover and simmer for 20 minutes until vegetables are fork-tender.
- Step 4: Remove from heat. Stir in 2 tbsp fresh dill, 1 tbsp lemon juice, 1 tsp salt, and 1/2 tsp black pepper. Use an immersion blender to puree soup until completely smooth, or transfer in batches to a blender. Taste and adjust seasoning if needed.
