Lemon-Dill Chicken with Lemon-Herb Rice

Ingredients
- 2 (6 oz each), pounded to 1/2-inch thickness chicken breasts
- 1, zested and juiced lemon
- 2 tbsp chopped fresh dill
- 2 tbsp olive oil
- 1 cup uncooked brown rice
- 2 cups chicken broth
- 1, minced shallot
- 1 tsp dill weed
Instructions
- Step 1: Season chicken breasts with salt, pepper, 1 tsp lemon zest, and 1 tbsp dill. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden and internal temperature reaches 165°F.
- Step 2: Remove chicken and set aside. Add shallot to skillet and cook for 1 minute until softened.
- Step 3: Add brown rice and chicken broth, bring to a simmer, then cover and cook for 25 minutes until rice is tender and liquid absorbed.
- Step 4: Stir in remaining 1 tbsp lemon zest, lemon juice, and dill weed into rice. Slice chicken and serve with rice, garnished with extra dill.
