Lemon-Dill Quinoa Salad with Cucumber

Ingredients
- 1/2 cup quinoa
- 1/2 cucumber
- 1 lemon
- 2 tbsp fresh dill
- 2 tbsp olive oil
- 1/4 cup red onion
- 1/2 cup cherry tomatoes
- 1/4 tsp sea salt
- pinch black pepper
Instructions
- Step 1: Rinse 1/2 cup quinoa under cold water until water runs clear. In a small saucepan, combine quinoa with 1 cup water and 1/4 tsp sea salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and let cool for 10 minutes.
- Step 2: Dice 1/2 cucumber into 1/4-inch cubes and thinly slice 1/4 cup red onion. Cut 1/2 cup cherry tomatoes in half. Zest 1 lemon and cut it into wedges.
- Step 3: In a large bowl, whisk together 2 tbsp olive oil, 2 tbsp chopped fresh dill, 1/4 cup lemon juice (from 1 lemon), 1/4 tsp sea salt, and a pinch of black pepper. Add cooled quinoa, diced cucumber, sliced onion, and halved tomatoes to the bowl. Toss gently until everything is evenly coated. Serve chilled or at room temperature.
