Lemon-Dill White Bean and Farro Grain Bowl

  1. Step 1: Cook farro in 1.5 cups salted water for 25 minutes until tender. Drain and cool slightly.
  2. Step 2: Whisk lemon zest, lemon juice, 1 tbsp olive oil, and fresh dill in a bowl. Add drained white beans and toss gently.
  3. Step 3: In a large bowl, combine cooled farro, white bean mixture, cherry tomatoes, red onion, and chopped kale. Toss with remaining 1 tbsp olive oil until evenly coated.
  4. Step 4: Divide into bowls and top with crumbled feta just before serving.
