Lemon-Dill White Bean and Farro Grain Bowl

Ingredients
- 3/4 cup dry farro
- 1 (15 oz) can, drained white beans
- 1, zested and juiced lemon
- 2 tbsp finely chopped fresh dill
- 2 tbsp olive oil
- 1 cup halved cherry tomatoes
- 1/4 cup thinly sliced red onion
- 2 cups chopped kale
- 2 tbsp crumbled feta cheese
Instructions
- Step 1: Cook farro in 1.5 cups salted water for 25 minutes until tender. Drain and cool slightly.
- Step 2: Whisk lemon zest, lemon juice, 1 tbsp olive oil, and fresh dill in a bowl. Add drained white beans and toss gently.
- Step 3: In a large bowl, combine cooled farro, white bean mixture, cherry tomatoes, red onion, and chopped kale. Toss with remaining 1 tbsp olive oil until evenly coated.
- Step 4: Divide into bowls and top with crumbled feta just before serving.
