Lemon-Garlic Chicken Thighs

Ingredients
- 4 boneless, skinless (about 1.5 lbs) chicken thighs
- 2 tbsp olive oil
- 4 cloves, minced garlic
- 1, zested and juiced lemon
- 1/2 cup chicken broth
- 1 tbsp, chopped fresh thyme
- 2 tbsp butter
Instructions
- Step 1: Pat chicken thighs dry and season both sides with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken thighs and cook for 5 minutes per side until golden brown, then remove and set aside.
- Step 2: Add remaining 1 tbsp olive oil to skillet. Add 4 minced garlic cloves and sauté for 30 seconds until fragrant.
- Step 3: Stir in lemon zest, lemon juice, 1/2 cup chicken broth, and 1 tbsp chopped fresh thyme. Simmer for 2 minutes until slightly thickened.
- Step 4: Return chicken thighs to skillet, reduce heat to medium, and cook for 10 minutes until internal temperature reaches 165°F.
- Step 5: Stir in 2 tbsp butter until melted and sauce is glossy.
