Lemon-Garlic Chicken with Asparagus

Ingredients
- 4 (about 6 oz each), boneless and skinless chicken breasts
- 2 tbsp olive oil
- 4 cloves, minced garlic
- 1, zested and juiced lemon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lb, trimmed and cut into 2-inch pieces asparagus
Instructions
- Step 1: Pat chicken breasts dry with paper towels, then season both sides with 1 tsp salt and 1/2 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add 4 minced garlic cloves and cook for 1 minute until fragrant.
- Step 3: Add chicken breasts to the skillet, ensuring they are not crowded, and cook for 5-6 minutes per side until golden brown and internal temperature reaches 165°F.
- Step 4: While chicken cooks, add 1 lb trimmed and cut asparagus pieces to the skillet, stirring to coat with the garlic oil.
- Step 5: Squeeze the juice of 1 lemon over the chicken and asparagus, then sprinkle with 1 lemon zest. Cook for an additional 2 minutes until asparagus is tender-crisp.
