- 1.5 pounds chicken thighs
- 2 tablespoons olive oil
- 4, minced garlic cloves
- 1, zested and juiced lemon
- 2 tablespoons, chopped fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 425°F. Pat the 1.5 pounds chicken thighs dry with paper towels, then season evenly with 1 teaspoon salt and 1/2 teaspoon black pepper.
- Step 2: Arrange chicken thighs skin-side up in a single layer in a 9x13-inch baking dish. Drizzle with 2 tablespoons olive oil, then sprinkle with 4 minced garlic cloves, the zest and juice of 1 lemon, and 2 tablespoons chopped fresh thyme.
- Step 3: Roast for 35 minutes, or until skin is golden brown and crisp, and internal temperature reaches 165°F when checked with a meat thermometer.
- Step 4: Remove from oven and let rest for 5 minutes before serving to retain juices.
