Ingredients
- 12 ounces shrimp
- 2 medium, spiralized zucchini
- 3 tablespoons olive oil
- 4 cloves, minced garlic
- 1, zested and juiced lemon
- 1 cup, halved cherry tomatoes
- 1/4 cup, chopped fresh parsley
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
Instructions
- Step 1: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add shrimp and cook 2 minutes per side until pink, then remove and set aside.
- Step 2: Add remaining 1 tablespoon olive oil to skillet, then add minced garlic and red pepper flakes. Sauté 1 minute until fragrant but not browned.
- Step 3: Add spiralized zucchini noodles and cherry tomatoes, cooking 3 minutes until zucchini is tender-crisp. Stir in lemon zest, lemon juice, salt, and reserved shrimp. Toss until heated through, then sprinkle with fresh parsley.
