Soy-Glazed Shrimp with Zucchini Noodles

Ingredients
- 12 oz large, peeled and deveined shrimp
- 2 medium, spiralized into noodles zucchinis
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp, grated fresh ginger
- 1 clove, minced garlic
- 1 tbsp sesame oil
- 1 tsp cornstarch
- 2 tbsp water
- 1 tbsp sesame seeds
- 1/4 tsp (optional) red pepper flakes
Instructions
- Step 1: Whisk 2 tbsp soy sauce, 1 tbsp honey, 1 tsp grated ginger, 1 minced garlic clove, and 1/4 tsp red pepper flakes in a small bowl.
- Step 2: Heat 1 tbsp sesame oil in a large skillet over medium-high. Add shrimp and cook 2-3 minutes per side until pink. Remove and set aside.
- Step 3: Add zucchini noodles to skillet and cook 2-3 minutes until tender. Stir in soy sauce mixture and cornstarch mixed with 2 tbsp water, cooking 1 minute until sauce thickens and coats noodles. Return shrimp and toss to coat. Garnish with sesame seeds.
