Lemon-Garlic Shrimp Pasta with Zest

Ingredients
- 12 oz shrimp
- 8 oz spaghetti
- 3 tbsp olive oil
- 4 cloves garlic
- 1 lemon
- 1/2 cup heavy cream
- 2 tbsp fresh parsley
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and sauté for 1 minute until fragrant but not browned.
- Step 3: Add 12 oz peeled and deveined shrimp to the skillet, season with 1/2 tsp salt, and cook for 2-3 minutes per side until pink and opaque.
- Step 4: Squeeze the juice of 1 lemon over the shrimp, add 1/2 cup heavy cream, and stir until the sauce thickens slightly, about 2 minutes.
- Step 5: Toss the drained spaghetti into the skillet with 1/4 cup reserved pasta water, stirring until the pasta is evenly coated. Add 2 tbsp chopped fresh parsley and adjust seasoning with salt and pepper if needed.
