Lemon-Tarragon Shrimp with Zucchini Noodles

Ingredients
- 12 oz Shrimp
- 2 medium Zucchini
- 1 tbsp Olive oil
- 2 cloves Garlic
- 1 tbsp Lemon juice
- 1 tsp Tarragon
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add 12 oz shrimp and cook for 2-3 minutes per side until pink and opaque, then remove and set aside.
- Step 2: In the same skillet, add 2 minced garlic cloves and cook for 30 seconds until fragrant. Add 2 spiralized medium zucchini noodles and sauté for 3-4 minutes until slightly tender but still crisp.
- Step 3: Return shrimp to the skillet, add 1 tbsp lemon juice and 1 tsp chopped tarragon, then season with 1/2 tsp salt and 1/4 tsp black pepper. Toss to combine and heat through for 1 minute.
