Lemon-Thyme Chicken with Bitter Orange Peel

- 1 lb bone-in chicken thighs
- 3 fresh thyme sprigs
- 1 tbsp grated bitter orange peel
- 2 tbsp olive oil
- 2 minced garlic cloves
- 1/2 cup dry white wine
- 1/4 cup chicken broth
Instructions
- Step 1: Pat 1 lb bone-in chicken thighs dry with paper towels; season both sides with salt and pepper.
- Step 2: Heat 2 tbsp olive oil in a large ovenproof skillet over medium-high heat until shimmering; add chicken skin-side down and sear for 6 minutes until golden brown.
- Step 3: Flip chicken, add 3 fresh thyme sprigs and 1 tbsp grated bitter orange peel to the skillet; cook for 1 minute until fragrant.
- Step 4: Pour in 1/2 cup dry white wine and 1/4 cup chicken broth, scraping up browned bits; bring to a simmer and cook for 4 minutes until liquid reduces by half.
- Step 5: Transfer skillet to a preheated 400°F oven and bake for 20 minutes until chicken reaches 165°F internally, basting occasionally with pan juices.
