Lemon-Thyme Chicken with Herb-Infused Broth

Ingredients
- 4 boneless, skinless (1.5 lbs) chicken breasts
- 2 tbsp olive oil
- 2, zested and juiced lemon
- 2 tbsp, chopped fresh thyme
- 2 cloves, minced garlic
- 1/2 cup chicken broth
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Season 4 chicken breasts with 1/2 tsp salt and 1/4 tsp black pepper on both sides.
- Step 2: Heat 2 tbsp olive oil in an ovenproof skillet over medium-high heat. Add chicken and sear for 3 minutes per side until golden brown. Remove chicken and set aside.
- Step 3: Add 2 minced garlic cloves to the skillet and cook for 30 seconds until fragrant. Stir in 2 tbsp lemon zest, 2 tbsp lemon juice, 2 tbsp chopped thyme, and 1/2 cup chicken broth. Simmer for 2 minutes until slightly reduced.
- Step 4: Return chicken to the skillet, spooning sauce over the top. Bake uncovered for 20-25 minutes until chicken reaches 165°F internally and sauce has thickened slightly.
