Lemon-Thyme Grilled Chicken with Asparagus

- 4 boneless, skinless chicken breasts
- 2 tbsp lemon juice
- 1 tbsp, fresh leaves thyme
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 bunch, tough ends trimmed asparagus
Instructions
- Step 1: In a bowl, whisk together 2 tbsp lemon juice, 1 tbsp thyme leaves, 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper to make a marinade.
- Step 2: Place 4 chicken breasts in the marinade, turning to coat both sides. Marinate for 20 minutes at room temperature.
- Step 3: Preheat grill to medium-high (375°F). Brush grates with 1 tbsp olive oil to prevent sticking.
- Step 4: Grill chicken breasts for 6-7 minutes per side, until internal temperature reaches 165°F and juices run clear.
- Step 5: While chicken grills, place 1 bunch asparagus on the grill and cook for 4-5 minutes, turning once, until tender and slightly charred.
- Step 6: Let chicken rest for 5 minutes before serving with grilled asparagus.
