Lemon-Thyme Stuffed Chicken Breast

  1. Step 1: Preheat oven to 375°F (190°C). Pat chicken breasts dry and cut a horizontal pocket into each, being careful not to cut all the way through. Season the inside of the pocket with salt and pepper.
  2. Step 2: In a bowl, mix 2 tbsp fresh thyme leaves, 1 tbsp lemon zest, 1/2 cup shredded mozzarella cheese, and 2 tbsp olive oil. Spoon the mixture into the chicken pockets and secure with toothpicks.
  3. Step 3: Dredge each stuffed chicken breast in 1/4 cup all-purpose flour, shaking off excess. Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering. Sear the chicken for 2-3 minutes per side until golden brown.
  4. Step 4: Transfer the skillet to the oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C) and the cheese is melted and bubbly. Remove toothpicks and let rest for 5 minutes before serving.
