Lime-Cilantro Shrimp Skewers with Cucumber-Dill Salad

Ingredients
- 12 oz shrimp
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp cilantro
- 1 clove garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cucumber
- 1/4 cup red onion
- 2 tbsp dill
- 1 tbsp lemon juice
Instructions
- Step 1: In a bowl, whisk together 2 tbsp lime juice, 2 tbsp olive oil, 1 tbsp chopped cilantro, 1 minced garlic clove, 1/2 tsp salt, and 1/4 tsp black pepper. Add 12 oz peeled and deveined shrimp, toss to coat, and marinate for 15 minutes.
- Step 2: Thread 12 oz marinated shrimp onto skewers, discard excess marinade, and preheat grill to 375°F. Grill shrimp for 2-3 minutes per side until opaque and lightly charred.
- Step 3: Dice 1 peeled cucumber into 1/4-inch cubes, combine with 1/4 cup finely diced red onion, 2 tbsp chopped dill, 1 tbsp lemon juice, and a pinch of salt and pepper. Toss and let sit 10 minutes.
- Step 4: Serve grilled shrimp immediately with cucumber-dill salad on the side.
