Lime-Scented Ricotta Pancakes with Agave Syrup

- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup whole milk
- 1 large egg
- 1/2 cup ricotta cheese
- 1 tbsp lime zest
- 2 tbsp agave nectar
- 2 tbsp butter
Instructions
- Step 1: Whisk 1 cup all-purpose flour, 1 tsp baking powder, and 1/4 tsp salt in a medium bowl. In a separate bowl, beat 1 large egg and 1/2 cup ricotta cheese until smooth, then stir in 1 tbsp lime zest.
- Step 2: Add the wet ingredients to the dry ingredients along with 1 cup whole milk, mixing until just combined—do not overmix. Let the batter rest for 5 minutes.
- Step 3: Heat 2 tbsp butter in a non-stick skillet over medium heat until melted and shimmering. Pour 1/4 cup batter for each pancake into the skillet, spacing them apart.
- Step 4: Cook for 2-3 minutes on the first side until bubbles form on the surface and edges look set, then flip and cook for 1-2 minutes more until golden brown.
- Step 5: While pancakes cook, warm 2 tbsp agave nectar in a small saucepan over low heat until slightly syrupy, about 2 minutes. Serve pancakes topped with agave syrup.
