Linguine with Garlic-Saffron Shrimp

Ingredients
- 12 oz linguine
- 1 lb shrimp
- 1/4 tsp saffron threads
- 3 tbsp extra virgin olive oil
- 4 cloves garlic
- 1/2 lemon
- 2 tbsp fresh parsley
- 1 tsp salt
- 1/4 tsp red pepper flakes
Instructions
- Step 1: Bring 4 quarts salted water to a rolling boil in a large pot. Add 12 oz linguine and cook for 8 minutes until al dente, then drain and reserve 1 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant but not browned.
- Step 3: Add 1 lb peeled and deveined shrimp to the skillet, season with 1 tsp salt, and cook for 2 minutes per side until pink and opaque. Add 1/4 tsp saffron threads and 1/2 cup reserved pasta water, stirring until the saffron dissolves and the sauce thickens slightly.
- Step 4: Add the drained linguine to the skillet with 1 tbsp lemon juice, tossing to coat evenly. Stir in 2 tbsp chopped fresh parsley and cook for 1 minute until the pasta is heated through. Squeeze remaining lemon half over the top before serving.
