Low-Flame Braised Pork Shoulder

Ingredients
- 2 lbs, trimmed and cut into 1-inch cubes pork shoulder
- 2 tbsp olive oil
- 1, diced onion
- 2, diced carrots
- 2 stalks, diced celery
- 3 cloves, minced garlic
- 1 cup chicken broth
- 1 tbsp soy sauce
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large Dutch oven over medium heat. Add 2 lbs pork shoulder cubes and brown on all sides, about 8 minutes.
- Step 2: Add 1 diced onion, 2 diced carrots, 2 diced celery stalks, and 3 minced garlic cloves. Cook for 5 minutes until vegetables are softened.
- Step 3: Stir in 1 cup chicken broth, 1 tbsp soy sauce, and 1 tsp dried thyme. Season with 1/2 tsp salt and 1/4 tsp black pepper. Bring to a simmer, then reduce heat to low and cover. Braise for 2.5 hours until pork is fork-tender.
