Maple-Glazed Sweet Potato and Pecan Pie

- 2 lbs, peeled and cooked sweet potatoes
- 1/2 cup maple syrup
- 1/4 cup, melted butter
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 eggs
- 1, 9-inch pie crust
- 1/2 cup, chopped pecans
Instructions
- Step 1: Preheat oven to 375°F. In a large bowl, mash 2 lbs sweet potatoes until smooth, then stir in 1/2 cup maple syrup, 1/4 cup melted butter, 1/2 cup brown sugar, 1 tsp cinnamon, and 1/4 tsp nutmeg until well combined.
- Step 2: Whisk 2 eggs in a small bowl, then stir into the sweet potato mixture until fully incorporated.
- Step 3: Pour the sweet potato mixture into a 9-inch pie crust, then sprinkle 1/2 cup chopped pecans evenly over the top.
- Step 4: Bake for 45-50 minutes until the center is set and a knife inserted near the center comes out clean.
